Ingredients
  

  • 3 large eggs
  • 1 cup sweetened condensed milk
  • 1 cup self‑rising flour
  • 4 tbsp fresh lemon juice
  • 2 tsp lemon zest
  • Optional glaze:
  • 1 cup powdered sugar
  • 1 –2 tbsp lemon juice

Instructions
 

  • Preheat your oven to 160°C. Line a loaf tin with parchment paper.
  • In a large bowl, whisk together the eggs and condensed milk until smooth and fully combined.
  • Add the self‑rising flour and whisk until the batter is smooth.
  • Stir in the lemon juice and zest. Mix well.
  • Pour the batter into the prepared loaf tin.
  • Bake for around 45 minutes, or until a toothpick inserted into the centre comes out mostly clean.
  • Let the loaf cool completely before adding the glaze (if using).
  • To make the glaze:
  • Mix powdered sugar with lemon juice until you reach your desired consistency. Drizzle over the cooled loaf.
