Ingredients
- 250 g plain flour
- 220 g sugar
- 1 egg
- 110 g oil
- 3 very ripe bananas microwave 30–60 seconds if needed
- A pinch of salt
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1 ½ tablespoons baking powder
- ½ cup chocolate chips or chopped nuts optional
Instructions
- Preheat the oven to 160°C. Grease a loaf tin or line it with baking paper.
- Mash the bananas until smooth. If they’re not very ripe, warm them in the microwave for 30–60 seconds. Add the milk and vanilla, mix, and set aside.
- In a large bowl, whisk together the oil, sugar, and egg until pale and airy.
- Add the banana purée and mix until combined.
- Sift the flour with the salt and baking powder. Add the dry ingredients in two batches, folding gently so you don’t lose the air.
- Fold in chocolate chips or nuts if using.
- Pour into the tin and bake for 45–50 minutes, or until a skewer comes out clean.
- Cool for 10 minutes in the tin, then transfer to a rack. Keeps well for 2–3 days wrapped tightly.
